Persimmon Hollow Brewing Company is a rapidly growing craft brewery, Based in beautiful historic DeLand, in the heart of Central Florida. Duties & Responsibilities for Line/Prep Cook:
- Prepare delicious dishes according to set recipes and specifications in a timely manner.
- Set up workstations with all needed ingredients and cooking equipment.
- Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
- Cook food using various utensils and cooking equipment.
- Ensure great presentation by dressing dishes before they are served.
- Preparing items for Guests with special dietary needs
- Keep a sanitized and orderly environment in the kitchen; Follow sanitation policies at all times
- Ensure all food and other items are stored properly (FIFO)
- Check quality of ingredients and monitoring of stock rotation.
Qualifications
- Minimum 1 year of line cook experience
- Proven knowledge of HACCP (Hazard Analysis & Critical Control Points) as well as proper food handling techniques/temperatures (ServSafe)
- Demonstrated ability to follow recipes and an awareness of both modern and classic cooking techniques.
- Basic knowledge of butchering technique, food allergies and seasonal ingredients as well as kitchen equipment and tools (i.e. ovens, knives, etc.).
- Ability to read safety procedures, and operating guidelines & instructions in English.
- Ability to walk and stand for long durations.
- Ability to safely lift up to 25 pounds.
- Ability to work scheduled hours, including weekdays, weekends, and holidays.

Job Duties:
- Prepare all food items as directed in a sanitary and timely manner.

- Operate standard kitchen equipment safety and efficiently.
- Clean and maintain station in practicing good safety and sanitation.
- Assist with the cleaning and organization of kitchen and equipment.
- Restock items as needed throughout the shift.
- Adhere to all sanitation and food production codes.
