Line Cook / Prep Cook – Lake Eola

Persimmon Hollow Brewing Company is a rapidly growing craft brewery, Based in beautiful historic DeLand, in the heart of Central Florida. Our award-winning craft beers are beloved throughout Central Florida and our ever-growing distribution network. We will be soon opening up our Lake Eola brewery and taproom and it’s a great opportunity to begin your career at Persimmon Hollow!

Duties & Responsibilities for Line/Prep Cook:

  • Prepare delicious dishes according to set recipes and specifications in a timely manner.
  • Set up workstations with all needed ingredients and cooking equipment.
  • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
  • Cook food using various utensils and cooking equipment.
  • Ensure great presentation by dressing dishes before they are served.
  • Preparing items for Guests with special dietary needs
  • Keep a sanitized and orderly environment in the kitchen; Follow sanitation policies at all times
  • Ensure all food and other items are stored properly (FIFO)
  • Check quality of ingredients and monitoring of stock rotation.

Qualifications

  • Minimum 1 year of line cook experience
  • Proven knowledge of HACCP (Hazard Analysis & Critical Control Points) as well as proper food handling techniques/temperatures (ServSafe)
  • Demonstrated ability to follow recipes and an awareness of both modern and classic cooking techniques.
  • Basic knowledge of butchering technique, food allergies and seasonal ingredients as well as kitchen equipment and tools (i.e. ovens, knives, etc.).
  • Ability to read safety procedures, and operating guidelines & instructions in English.
  • Ability to walk and stand for long durations.
  • Ability to safely lift up to 25 pounds.
  • Ability to work scheduled hours, including weekdays, weekends, and holidays.

Job Duties:

  • Prepare all food items as directed in a sanitary and timely manner.
  • Follow recipes and presentation specifications.
  • Operate standard kitchen equipment safety and efficiently.
  • Clean and maintain station in practicing good safety and sanitation.
  • Assist with the cleaning and organization of kitchen and equipment.
  • Restock items as needed throughout the shift.
  • Adhere to all sanitation and food production codes.

Pay Frequency:

  • Bi-weekly or Twice monthly
